But one thing at a time. We were quite worried about ourselves because we wanted a good product in its entirety. Now we are happy to introduce nucao to you.
nucao was developed on a nutritional basis. Natural ingredients with a high nutrient density have been combined in such a way that your body can absorb them as well as possible and is therefore optimally supplied. We only use high-quality natural ingredients - no synthetic additives or preservatives. Because nutrients are most valuable to you in their natural network.
For this we worked together with the food chemist Tom Teichert from TU Dresden and were awarded the Exist start-up grant from the Federal Ministry of Economics for the innovative recipe and production method.
A high carbohydrate content is out of place for snacks. Instead, nucao supplies you with secondary plant substances, proteins, minerals, vitamins and unsaturated fatty acids. As snacks between meals, a high proportion of carbohydrates ensures a rapid rise in blood sugar levels and, as a result, insulin levels. Insulin is responsible for the breakdown of blood sugar, which then falls below the original level. In the short term, this can lead to listlessness, fatigue and cravings. In the long term, carbohydrates such as refined sugars increase the risk of diabetes and cardiovascular disease.
With 16.5% carbohydrates, nucao has a very low proportion compared to conventional chocolate. In addition, the carbohydrates present, mainly in coconut syrup, have a low glycemic index. This tells us how much a food affects the blood sugar level.
nucao has set itself the goal of keeping the ecological footprint as low as possible. Maintaining sustainability is multi-layered and complex. It begins with the cultivation of the cocoa fruit, continues with water consumption in production and ends with packaging. We have made it our goal to make all these processes as sustainable as possible. We are not yet as sustainable as we would like to be, but we have already taken many big steps in the right direction.
The most visible result: nucao is packed in a biodegradable cellulose film: So let's put it on the compost! nucao is protected by cardboard which ends up in the waste paper and can be recycled.
We want to help nature to regenerate so that future generations can live in a world worth living in. What our earth urgently needs is new biomass that binds CO2 - trees, many of them! That's why you plant a tree with each nucao.
With a box of 12 nucao bars, you plant 12 mangroves in Madagascar, thus binding ~ 3600kg CO2. The CO2 saved corresponds to the emissions of an almost 6-day car journey without interruption. Alternatively, you could leave a light bulb burning for 32 years. We work together with the renowned reforestation network Eden Projects. Monthly we donate the appropriate amount, and get a detailed report where the trees were planted and how they help people and nature.
Fair & Direct traded
When selecting our suppliers, we also pay attention to fair working conditions for farmers and organic farming. Particular care must be taken with our main ingredient, cocoa, as child labour and exploitation are the order of the day in many growing regions. We therefore source our cocoa directly from a farmers' cooperative in Peru. In addition, cocoa remains a product from the jungle there, without large plantations and resulting rainforest deforestation. We also want to guarantee this 100% for our other suppliers and therefore hold regular discussions and strive for even more transparency.TO THE NUTREE PROJECT
nucao is no ordinary chocolate. It is indeed so unusual that two years ago nobody in Europe wanted to help us produce it. The idea came from our shared kitchen - but it gradually became so complicated that scaling for mass production turned out to be a huge problem. Normal chocolates are heated to a high temperature and chased liquid through nozzles before they land in the mould. A few nuts or seeds are then sprinkled over it. nucao, on the other hand, is a viscous mass that must first be processed. Long story short - we did it ourselves. So after graduating, a chocolate factory had to be set up - quickly and in the middle of Dresden! Unfortunately we had to pull the ripcord at the beginning of 2018 because we simply couldn't keep up. nucao is now produced near Berlin by a partner company and Thomas is still there regularly to see what's going on.
